Chorizo Omelette

Eggs are my favorite food. Although I enjoy them especially for breakfast, they are also good for lunch and dinner as well. In addition to soft boiled eggs, hard boiled eggs, scrambled eggs, and poached eggs, I like eggs prepared in most ways imaginable. It is omelets that I particularly enjoy.

Unlike a small, dainty omelette, this chorizo omelette is big and hearty. It is a very different omelet from this egg white one, which is also excellent, but in a very different way. There is no doubt that you will feel full for several hours after eating this big, substantial egg dish.

This is such a tasty treat! There’s something incredible about the combination of caramelized onions, spicy meat, and sharp cheddar.

Chorizo Omelette Ingredients

This simple and tasty omelet only requires a few simple ingredients. Please refer to the recipe card below for exact measurements. As a general overview, here’s what you’ll need:

  • Eggs: For most of my recipes, including this one, I use large eggs.
  • Kosher salt and black pepper: If using fine salt, you should reduce the amount you use by half, or the omelet could end up too salty.
  • Olive oil: This oil is delicious and I love it for cooking. Avocado oil, however, has a higher smoke point and is a better choice. A good alternative to butter is butter.
  • Sliced onions: Slice them thinly. I usually use yellow onions, but sometimes I vary this recipe and use green onions.
  • Spicy Spanish chorizo: Palacios’ hot chorizo is one of my favorites.
  • Shredded cheese: Cheddar that’s extra sharp is my favorite. You won’t believe how flavorful it is!
  • Optional toppings: Sour cream, salsa, and avocado are all available options. Sour cream is one of the ingredients I like to use, as you can see in the video below. Adding cilantro to the omelet before it is cooked is also a favorite of mine.

Chorizo Omelette Instructions

The recipe card contains detailed instructions. Scroll down to see them. Basically, this recipe involves the following steps:

  • Beating the eggs with salt and pepper in a small bowl is the first step. Then set them aside.

  • A nonstick skillet with a 10-inch diameter should be heated over medium heat for about 3 minutes. It should be brushed with olive oil.
  • The onions should be golden after about 5 minutes of stirring occasionally. One more minute, stirring occasionally, then add the chorizo.

  • Use a heat-resistant spatula to stir gently the eggs on top of the onions and chorizo to distribute evenly. Continue to cook for 2-3 minutes until the bottom of the eggs is starting to set.

  • Let the uncooked egg from the top slide below the omelet’s edges, where it will cook faster. Gently lift the edges of the omelet.
  • The omelet can be flipped with two wide spatulas once the bottom has been set. Use this method to flip it as shown below.

  • The second side should be cooked for 1-2 minutes more. Then, sprinkle shredded cheddar cheese on one half and fold it in half.

  • Slide the Omelette onto a plate, then turn off the heat and allow the cheese to melt.

Variations

  • If you don’t want to use olive oil, you can cook eggs in butter or ghee. When it comes to cooking eggs, I particularly like to use butter.
  • There are times when green onions are used in place of yellow onions.
  • Get creative with cheese, such as Gruyere or Gouda. Smoked gouda is a personal favorite of mine. My omelet is flavored with it and I love how it tastes.

How do you flip an omelet?

Using two wide best spatulas will allow you to flip it, but the omelette may fall apart if you do this. This is how I usually work. Upon placing the best skillet for eggs on a heatproof plate, I begin cooking. Afterward, I invert the omelet onto a plate with the cooked side facing up, then slide it back into the skillet. The third option would be to flip it not at all. As soon as the bottom is almost cooked, lower the heat to medium. Over very low heat, cover the skillet as soon as the top is set.

How to serve chorizo omelette?

The good news is that you do not need to serve it with french toast if you follow a low carb or keto diet! You can add some berries or cut up some tomatoes to balance out the richness of the dish.

To make the omelet extra rich, you can add avocado slices or a dollop of sour cream. In addition, if you prefer bread for breakfast, there are other options! It would be good to make keto English muffins, 90-second bread, or almond flour biscuits.

Ingredients

  • 3 Large Eggs
  • 1 tsp Olive oil
  • ⅛ tsp Black pepper
  • ¼ cup Thinly sliced onions
  • ¼ cup Shredded cheddar cheese
  • ¼ cup Spicy chorizo sausage link
  • ¼ tsp Diamond Crystal kosher salt

Instructions

    To begin, cut the onion and chorizo into slices.

    After that, beat the eggs with pepper and salt.

    Olive oil is used to cook the onions until they are golden brown. Chorizo should be added to the skillet and cooked briefly.

    Stir gently when the eggs are added to the onions and chorizo.

    Gently lift the edges of the omelet after the bottom has set to allow liquid eggs to go to the bottom and cook faster.

    Make sure the omelet is flipped carefully. Serve half of the cheese with it, fold it, and garnish with the remaining cheese.
