Selecting Your Sausage

You should choose sausages that are as fresh as possible when purchasing them. Go to a butcher or a farmers’ market to find sausage that is made on the same day as you. Make sure the sausage is plump and bright color.

The Different Types of Sausage

You should understand there are dozens of different sausage types out there. All of these sausages vary in thickness and style and must be cooked differently. In this article, we will focus on some of the most popular types of sausage and how to prepare and prepare them.

Andouille

It originates from France, although it is also widely consumed in Cajun cuisine. It is a great way to add heat to dishes that call for smoked sausages, such as gumbo and jambalaya. It is possible to cook this type of sausage on the griddle before slicing it if the outside is still crispy.

When cooking unsmoked Andouille sausage on the griddle in its casing, make sure you brown it well. Detect when the sausage has reached the desired temperature, remove it from its casing, slice, and serve.

The Blackstone Sausage and Peppers recipe is a classic blackstone recipe of classic sausage and peppers, but it's healthier by substituting chicken sausages for the pork ones.

Ingredients

  • 1 Onion
  • 4 Cloves garlic
  • 6 Oz mushrooms
  • 1 Tbsp Italian seasoning
  • 2 Bell peppers of choice
  • Vegetable oil for the griddle
  • 1 Pound Italian sausage links
  • Kosher salt, pepper, crushed red pepper flakes

Instructions

  1. Prepare the Italian sausage by cutting it into 1-inch pieces. For a raw Italian sausage, cook it on a skillet or griddle for 4 to 5 minutes per side over medium heat. Let cool completely before slicing.
  2. Cut the bell peppers, onion, and mushrooms into thin slices. Mince the garlic and peel the onion.
  3. Stack the sausage and the sliced vegetables on a tray. With kosher salt, pepper, and crushed red pepper flakes, season the grilled chicken with Italian seasoning.
  4. Preheating the Blackstone griddle to medium high heat is recommended. When hot, add the vegetable oil and seasoned vegetables along with the Italian sausage.
  5. It should be cooked for 8 to 10 minutes, turning it over and stirring a few times. Take it off the griddle and return it to the same baking sheet.
  6. Alternatively, the pesto can be topped with marinara sauce and provolone cheese.

Notes

This recipe calls for cooking times for standard sausages that are 1 inch thick. Cook your sausage for longer if it is thicker/thinner, & check the temperature of your sausage with an instant-read thermometer at the end.
