Various methods were used to cook with the Slow ‘N Sear. We began with the “fast” method for baby back ribs, filling the basket with hot coals from the chimney starter, topping with peach-wood chunks, and adding water to the reservoir. To maintain a 325 °F temperature during the three-hour cook, we added hot coals once at the 1½-hour mark. The outcome? Smoky, juicy, and tender baby back ribs.
