14. Slow ‘N Sear Deluxe Charcoal Grill

Slow ‘N Sear Deluxe Charcoal Grill

  • Brand: Slow ‘N Sear
  • Model: SNS 1000+
  • Color: Stainless Steel
  • Material: Stainless Steel
  • Weight: 7.25 pounds
  • Dimension: 21 x 12 x 7 inches

Transform your 22-inch kettle grill into a versatile smoker with the Slow ‘N Sear Deluxe, suitable for indirect cooking and high-heat searing. This unique half-moon charcoal basket features an integrated 1-quart water reservoir and fits snugly against the grill’s side, easily accessible through the hinged cooking grate.

We put the Slow ‘N Sear to the test with various cooking methods, from “fast” and “slow” indirect-cooking and smoking to blackening vegetables over direct heat (sear). Although less expensive charcoal baskets are available, none offer the functionality range of the Slow ‘N Sear, which professional grilling expert Craig “Meathead” Goldwyn hails as “the single best accessory for the Weber kettle ever.” The original Slow ‘N Sear Plus has been discontinued and replaced by the Slow ‘N Sear Deluxe, featuring a removable water reservoir and differently shaped holes in the bottom grate for enhanced warp resistance. While we haven’t tested the updated version, its similarity to the Plus leads us to believe it should perform just as well.

Various methods were used to cook with the Slow ‘N Sear. We began with the “fast” method for baby back ribs, filling the basket with hot coals from the chimney starter, topping with peach-wood chunks, and adding water to the reservoir. To maintain a 325 °F temperature during the three-hour cook, we added hot coals once at the 1½-hour mark. The outcome? Smoky, juicy, and tender baby back ribs.

Griddle vs. Barbecue: What’s the Difference?

There may be some confusion regarding the difference between a barbecue and a gas griddle, as well as why one would be better for your cooking needs.

Stand-Alone Griddle

The stand-alone griddles are powered by gas, similar to barbecues, but there is no open flame, lid, or grates on them. Griddles with this kind of flat surface tend to have more surface area and more even heat distribution. It is common for the grill to be much hotter in some areas of the grill, while the griddle maintains a consistent temperature throughout.

Unlike barbecues, there are no grates to mess with when cooking. When cooking is complete, all grease and excess food can be easily discarded through a small hole in the back of the griddles. Basically anything can be cooked on the griddle. Grates on the grill do not cause food to be lost like they do on barbecues.

The lids of grills are very appealing to some people, but there are also accessories that can be purchased that allow you to cook this way on your griddle. Griddles are also extremely fast at getting hot, which allows their food to cook more quickly.

The barbecue differs from a regular grill in that it has an open flame, grates through which food can easily fall, and a lid that makes it look like a convection oven. Griddles don’t offer the same smoky flavor as barbecues (or grills) due to the open flame. Generally speaking, that’s the biggest advantage of grilling.

You get a nice char on the food when you cook with the grates, which also enhances its flavor. However, you cannot grill food directly over the grates because you are limited to what you can put on the grates. It may be necessary to wrap vegetables like asparagus or brussels sprouts in foil to prevent them from falling from the grill.

In addition, barbecues are notoriously difficult to clean. It can be a difficult and messy task to scrape the grates and clean out the bottom of the grill in addition to scraping the grates. Another big difference is that the barbecue can be closed like a convection oven to achieve the same effect. Your meat will cook thoroughly without getting charred on the outside when you use this method.
