These general-purpose knives are used for chopping, slicing, dicing, and mincing tasks both in the kitchen and in the kitchen garden.

It refers to the chopping, dicing, and mincing actions associated with Santoku. All of these tasks are handled perfectly by it. Nevertheless, you should avoid cutting large meat bones, slicing bread, and executing precise tasks (like peeling).

Types of Steel

Meiji Knives

Meiji knives combine the looks and performance of Japanese knives with Western blades. Stainless steel FC61 fine carbide is used in the manufacture of these knives. It has a thin, mirror-polished blade profile that is authentic Japanese.

With a charcoal Pakkawood handle, the blade is made from 100 layers of etched ladder Damascus. Holding this beautiful piece of art makes you feel good. It even works better than that! Additionally, this series is also handmade in Seki, Japan, like the other variants of Bob Kramer knives

Carbon Knives

After continuous use, the carbon knives will develop a pleasant patina of 52100 carbon steel. Heat-treated knives with African blackwood handles and brass bolsters feature 61 Rockwell hardness. Using the right steel and applying the right heat treatment makes all the difference.

This grain structure and heat treatment ensure the best performance in carbon steel: maximum sharpness, edge retention, ease of sharpening, and therefore, maximum performance.” Sharpness is enhanced by honed blade angles of 15° on each side. These knives should only be hand-washed and hand-dried after each use.

It is a good idea to wipe down the blades after chopping each ingredient when you cook because carbon reacts with acid. Upon exposure to different elements, carbon steel naturally oxidizes. Patinas are normal and are called natural. Patinas serve as protective layers against rusting and discoloration over time.

Damascus Knives

As the name implies, Damascus knives are made of 50 layers of nickel and stainless steel, also called “SG2” or “Super Gold 2”. Ultimately, the blade is made up of 101 layers of deep etched Chevron Damascus.

Ice-hardened to 63 Rockwell, the knives are made from stainless steel. Despite prolonged use, the Linen Micarta handle does not wear out. In Seki, Japan, Zwilling manufactured blades honed to 15° on each side for extremely sharpness based on Bob Kramer’s designs.

Essential Collection

Traditional European design is a key influence on Bob Kramer knives in the essential collection. The Essential Collection includes knives that are optimized for kitchen use. Steel FC61 is used to make these blades, which have a Rockwell hardness of 61.

As a result of double Friodur hardening, the steel’s microstructure is improved, resulting in improved cutting performance, corrosion resistance, and durability. Long-lasting and incredibly durable, they hold their sharp edge for a long time.

Final Thoughts

Despite my high expectations, this knife genuinely surprised me with its comfort level. The same was true for most people I handed this to. There is no doubt that the blade performance of a Zwilling Kramer chef knife is excellent, but the handle and balance are the standout features of these knives.

I don’t mean to discount the blade in any way. This style of knife benefits from FC61’s great balance between toughness and hardness. In addition, it remains sharp easily, even if you aren’t the best at maintaining knives. Gytutos with western-leaning curvatures are not my thing due to the extreme curvature of the edge.

As far as I’m concerned, I think that this is the knife you need to get your parents. With a little flash and a lot of toughness, it’s an incredibly friendly device for beginners. However, I’d be cautious about buying this as a gift for any professional cook since it is so different from other chef knives sold today. It’s just cool to have this knife at the end of the day. The story is good, the design is neat, and it works well.
